Does Hummingbird uninstall remove everything related to this plugin

If I uninstall Hummingbird and revert back to the the optimizer I was using before, is Hummingbird going to leave behind code thats going to cause a conflict.

    No. After you will deactivate and remove Hummingbird it will not leave code that can cause any conflict with another optimization plugin. Conflicts are possible only when those two plugins will be working at the same time on one site.
